Recipe for Graduation Punch

This is our favorite punch for the many Christmas parties that we have hosted. The recipe for Graduation Punch is from the Winners, More Recipes From The Best of Bridge. We have used it over and over again, not only for a graduation celebration but for Christmas parties, pre-wedding dinners, and summer entertaining. I like to make an ice block by putting some orange juice mixed with cranberry juice in a small bowl. I freeze this then put it in the bottom of the punch bowl. It keeps the punch cold, melts slowly and does not dilute the punch. Most often we serve this punch without the vodka as many people are looking for non-alcoholic drinks.

INGREDIENTS for Graduation Punch

  • 4 cups Pineapple Juice 1L
  • 4 cups Limeade 1L
  • 4 cups Orange Juice 1L
  • 4 cups Orange Pop 1L
  • 8 cups Ginger Ale 2L
  • Fresh Orange Slices
  • Fresh Strawberries

*Optional: 2-26 oz. bottles Vodka 2-710mL

METHOD for Graduation Punch

Mix all together, adding dinger ale last, in a large punch bowl. Float orange slices and strawberries on top for a festive touch. Serves 30.

* If they don’t graduate you can add the vodka.

Recipe for Citrus Punch

This citrus punch has a very refreshing taste. As well as the lemon slices you can add some orange slices, they have a bit more color. It is a great punch if you are looking for a nonalcoholic punch to have at your Christmas party.

INGREDIENTS for Citrus Punch

  • 4 Tea Bags 4
  • 1 cup Boiling Water 250 mL
  • ½ cup Liquid Honey 125 mL
  • 1 Frozen Orange Juice Concentrate 177 ml
  • ½ cup Lemon Juice 125 ml
  • 1 Lemon-Lime Soda bottle 750 ml
  • Ice Cubes
  • Lemon Slices

METHOD for Citrus Punch

Place tea bags in heatproof jug, and pour in boiling water. Let steep for 5 minutes; remove tea bags. Stir in honey, orange juice concentrate and lemon juice. Chill.

To serve, pour into punch bowl or pitcher. Add soda, ice and lemon slices. Makes 12 servings.

Recipe for Orange Eggnog

We always make our own eggnog at Christmas time. There are many, many versions of it but this orange eggnog has a special flavor. The orange combined with the touch of chocolate makes it very distinctive.

INGREDIENTS for Orange Eggnog

  • 6 Eggs 6
  • ¾ cup Granulated Sugar 175 mL
  • ½ tsp Freshly Grated Nutmeg 2 mL
  • ½ tsp Cinnamon 2 mL
  • 3 cups Milk 750 mL
  • 1 cup Light Cream 250 mL
  • 1 cup Orange Juice 250 mL
  • Grated Chocolate
  • Grated Orange Rind

METHOD for Orange Eggnog

In large bowl, beat eggs until light and fluffy. Stir in sugar, nutmeg and cinnamon. Blend in milk and cream. Gradually stir in orange juice. Chill until very cold. (Eggnog can be refrigerated for up to 2 days.)

Serve in mugs or cups and sprinkle with chocolate and orange rind. Makes 10 to 12 servings.

Recipe for Spiced Cranberry Punch

Cranberry Punch has such a lovely color and it is so suitable for Christmas parties. The spices give it a lovely flavour. Can be served hot or cold. If serving cold, I like to use a block of orange juice in the punch bowl rather than ice cubes. I put the juice in a small bowl then freeze it. This way the ice melts slowly and ads to the flavor of the punch rather than dilute it.

INGREDIENTS for Spiced Cranberry Punch

  • ⅓ cup packed Brown Sugar 75 ml
  • 1 can Frozen Cranberry Cocktail Concentrate 275ml
  • 2 cups Water 500 ml
  • 1 cup Orange Juice 250 ml
  • 8 Whole Cloves 8
  • 2 sticks Cinnamon 2
  • 2 Limes, thinly sliced 2
  • 1 bottle Ginger Ale (optional) 750 ml
  • Ice Cubes

METHOD for Spiced Cranberry Punch

In large saucepan, combine sugar, cranberry cocktail concentrate, water, orange juice, cloves and cinnamon. Stir until sugar has dissolved. Bring to boil; reduce and simmer for 5 minutes. Remove spices. Serve immediately with lime slice floating on top of each mugful. Or chill and at serving time, add ginger ale (if using); pour over ice and serve with lime slices. Makes 10 to 12 servings.

Recipe for Blush Sangria

We love sangria. It is so easy to drink. This Blush Sangria is nice if you are having friends in for a light meal or just for appetizers. We often double or triple this recipe. It is not necessary to increase the quantity for the marinate. Sip carefully as it is so good it is easy to consume too much!

INGREDIENTS for Blush Sangria

  • 10 Coriander Seeds 10
  • 6 Cardamom Pods 6
  • 3 strips Orange Rind 3
  • 2 slices Gingerroot, finely chopped 2
  • 1 cup Water 250 ml
  • Ice Cubes
  • 1 bottle Blush or Red Wine 750ml

Marinated Grapes and Melon:

  • 1 lb Seedless Green Grapes 500 g
  • 4 cups Spanish or Honeydew Melon Balls (about half a melon)
  • ¼ cup Liquid Honey 50 ml
  • ¼ cup Cognac, Brandy or Sherry 50 ml
  • 1 tsp Lemon Juice 5 ml

METHOD for Blush Sangria

In small saucepan, crush coriander seeds and cardamom pods. Add orange rind, ginger, water and sugar. Stir until sugar has dissolved. Bring to boil; reduce heat and simmer for 15 minutes. Let cool to room temperature. Strain; refrigerate until well chilled.

Marinated Grapes and Melon: In large bowl, combine grapes and melon; toss with honey, cognac and lemon juice. Chill at least 4 hours or overnight, stirring occasionally.

At serving time, pour spiced mixture into tall pitcher filled with ice; add wine. Let guests spoon Marinated Grapes and Melon into large wine glasses and fill with wine mixture. Makes 8 servings.

Recipe for Blueberry Tea Punch

This Blueberry Tea Punch is a lovely beverage for a cold snowy night. It works well if having a group friends gathered to go caroling or a cookie exchange. It makes a change from some of the more traditional Christmas punches. Since the basic recipe only makes 15 servings it is not necessary to put it in a punch bowl. If you wish to make a larger amount you could double or triple the recipe. In that case it is nice to put it in a punch bowl. When I add ice to a punch bowl I will usually use a small bowl of frozen juice so as it melts the punch is not diluted.

INGREDIENTS for Recipe for Blueberry Tea Punch

  • 1 cup Water 250 mL
  • ½ cup Granulated Sugar 125 mL
  • 3 cups Cold Water 750 mL
  • 2 cups Strong Tea 500 mL
  • 1 can Frozen Blueberry Beverage Base 250ml
  • ½ cup Lemon Juice 125 mL
  • 1 bottle Sparkling White Wine 750 ml
  • Ice Cubes
  • Lemon Slices

METHOD for Blueberry Tea Punch

In saucepan, bring 1 cup (250 mL) water and sugar to boil. Remove from heat and let cool.

In large container, combine cooled syrup, cold water, tea, blueberry beverage base and lemon juice. Refrigerate until well chilled.

At serving time, pour chilled mixture into serving container. Add sparkling wine, ice and lemon slices. Makes about 15 servings.
