Top Ten Christmas Ideas Our Favorite Christmas Desserts

At Christmas time we are all thankful for many things – for our families and the love we share with them, for our health and never more so as we age, for the relative peace in which we live, and at Christmas 2008 we are thankful for the prosperity that we enjoy.

On the lighter side of life in our family at Christmas time we are thankful for Christmas desserts. This is a time of year when diets are set aside and we can indulge in all those sinful goodies that we deny ourselves all year long. In the spirit of making merry and enjoying the season I thought it would be fun to share with you our family’s favorite Christmas desserts.

No Bake Mincemeat Mallow Cheesecake

We discovered this recipe many years ago. We do not make it every year but it makes a wonderful dessert if you are going to a pot luck or have been asked to bring a dessert. We assume you all love mincemeat!

  • 1 cup vanilla wafer crumbs
  • 1/4 cup melted margarine (butter can be substituted)
  • 1 3/4 cups of mincemeat
  • 4 cups of Miniature Marshmallows
  • 1/3 cup of orange juice
  • 2 8-oz Philadelphia cream cheese soften (another brand can be substituted – don’t used the spread)
  • 2 teaspoons grated orange rind
  • 1/2 pint heavy cream whipped

Combine crumbs and margarine. Press onto bottom of 9 inch spring form pan. Chill.

Spread mincemeat over crust. Melt marshmallows with orange juice in double boiler: stir until smooth. Chill until thickened. Combine softened cream cheese and orange rind, beating until well blended and fluffy. Whip in marshmallow mixture: fold in whipped cream. Pour over mincemeat. Chill until firm. Garnish with additional mincemeat and chopped seasonal fruit to form a wreath, if desired.

*The orange juice and the orange rind cuts the sweetness of this desert and definitely add to the taste.* In another season you could use a fruit compote as long as it was thick enough to support the layering.
